Meaty Mushroom Wraps
Ingredients
Per person:
100g button or portobello mushrooms, sliced about 1cm thick
½ a medium red or brown onion, peeled and cut into 4 wedges
2T olive oil or other mild vegetable oil, divided
1/2 t ground cumin
½ t paprika, regular or smoked
1/4t salt
1 wrap or pita bread (gluten-free if required)
Large handful thinly sliced red cabbage
Salt and pepper
Dash of lemon juice or vinegar of your choosing
¼ cup hummus
¼ cup grated Angel Food dairy-free cheddar
Fresh herbs, e.g. mint and coriander

Steps to make Meaty Mushroom Wraps
Preheat oven to 180 degrees.
in a mixing bowl, coat the mushrooms and onion with 1T vege oil. Add the cumin, paprika and salt, and mix gently.
Spread the mushrooms and onion out in a baking dish, and bake until tender and browned, approx. 15 minutes.
Combine the cabbage with 1T oil and a dash of vinegar or lemon juice in a bowl. Season to taste with salt and pepper.
To serve, spread wrap with hummus. Top with cabbage, grated cheese, mushrooms, onion and fresh herbs.
