Kumara Pizza Bites
Ingredients
1kg medium gold or orange kumara (long thin ones work best)
½ cup pizza sauce (or tomato puree)
½ cup grated Angel Food mozzarella or cheddar
Optional toppings as desired: olives, capers, fresh basil, fresh thyme, sliced cherry tomato
Steps to make Kumara Pizza Bites
Preheat oven to 180 degrees and line two large baking sheets with baking paper.
Slice the kumara (don’t peel it!) into discs about 1cm thick.
Spread out evenly on the baking sheets and bake until soft (approx. 20 minutes).
Top each slice with pizza sauce and cheese, and return to the oven until the cheese is melted.
Add the extra toppings (they’ll stick better to melted cheese) and serve.
You can also bake the kumara slices ahead of time and store in the fridge for a couple of days until you need them. If you do this and don’t have the oven on for something else, you can use the microwave for the final cooking step.
