Lemon, Herb and Spice Marinated Feta
Feta by itself is delicious, but marinating it in oil with tasty seasonings takes it to the next level! So handy to have in the fridge to pop on top of a salad or to stir into hot pasta. It can also be the star of an improvised snack platter.
Ingredients:
1 cup olive oil
4 cloves garlic
1 tsp fennel seeds
1 tsp coriander seeds
4 small sprigs fresh thyme
1 small piece fresh rosemary
1/8 teaspoon chilli flakes
Zest and juice of 1 lemon
1 tub Angel Food plant-based feta 220g
Method:
Peel garlic and flatten cloves with the flat side of a big kitchen knife.
Gently heat ½ cup of the oil in a small pan with the garlic, fennel, coriander seeds, thyme, rosemary, chilli flakes and lemon zest. You don’t want to fry them, just to warm them for a few minutes to encourage the flavours into the oil. Set aside and leave to cool.
Cut the feta into cubes and place in a jar.
Mix the infused oil with the remaining half cup of oil and pour over the feta. If necessary, add more oil so the feta is covered.
Place the lid on the jar and refrigerate for at least 24 hours before using, allowing the flavours to blend.
Best served at room temperature.
You can keep this for a couple of weeks in the fridge. And once you’ve used the feta, the oil is delicious in sauces and dressings.
