Vegan "Chicken", Cranberry & Cream Cheese Panini
Ingredients:
Panini bread (supermarket and bakery panini’s are usually vegan, or you can make your own!)
1 Tbsp of cranberry sauce per panini
Sunfed Chicken Free Chicken (or your favourite vegan chick’n substitute)
Handful of baby spinach leaves
1 Tbsp oil
Salt & pepper to taste
Dairy-free margarine
Method:
Break the Sunfed Chicken Free Chicken into bite-sized pieces, add oil to a pan and shallow fry with a sprinkle of salt and pepper for a couple of minutes each side until golden brown.
Toast and butter the panini’s and spread with cranberry sauce. Slice the cream cheese and layer inside the panini with chunks of Sunfed Chicken and baby spinach.
