Savoury Vegan Pinwheels
Ingredients:
Dough
2 1/2 cups plain flour
4 tsp baking powder
1/4 cup Nuttalex margarine
1 cup soy milk
1/2 tsp salt
Filling
3 Tbsp vegan pesto (we have a recipe here, or you can use store-bought vegan pesto)
2 Tbsp sweet chilli sauce
1/2 cup Angel Food Cheddar/Grated Cheese
1 fresh tomato, chopped into small pieces
Half a red onion, chopped into small pieces
Method:
Preheat oven to 180°C and line a baking tray with baking paper.
Add all dry dough ingredients to a bowl, rub in margarine in then slowly add soy milk whilst stirring to form dough. Roll out dough on a floured surface to a square about 1cm thick.
Mix together chopped tomato, red onion and Angel Food cheddar/grated cheese in a bowl, then scatter over half of the dough. Spread vegan pesto, sweet chill sauce and Angel Food cream cheese over the other half of the doll.
Roll the dough around the filling into a log shape, then cut the log into 12 even pieces and place on a baking tray.
Bake at 180°C for approximately 15 minutes!
