Pizza Pockets

We like cooking these in the toasted sandwich maker but you could also bake them in a hot oven. They’re perfect for packed lunches and picnics, and delicious hot or cold.

Ingredients
Flexible wraps (the ones that promise not to crack when rolled!)


Pizza sauce
Angel Food plant-based cheddar or mozzarella, grated

Fillings of your choice, e.g.:

  • Tofu chorizo (recipe below)

  • Sliced olives

  • Sliced fresh tomato

  • Capers

  • Raw or fried slices of mushroom

  • Artichoke hearts

  • Marinated tofu (in small pieces)

  • Baby corn spears (cut in half lengthwise) or tinned corn kernels

  • Black beans

  • Spinach

  • Pesto

  • Fresh thyme

Directions

  1. Spread a small amount of pizza sauce on a wrap, leaving a wide margin at the edges with no sauce.

  2. Sprinkle with grated Angel Food cheese, and additional fillings as you like.

  3. Fold the edges of the wrap in to the centre in about 5 or 6 sections. They should cover the fillings completely or almost completely. 

  4. Optional: Brushing the top with a little oil will help it colour up nicely during cooking.

  5. Put a small plate or similar on top of the folded wrap to hold the folds down until you’re ready to cook it.

  6. Heat the toasted sandwich maker to the highest heat then put in the pizza pocket. If necessary, use a fish slice or similar long flat implement to hold the folds down while you put down the lid. 

  7. If baking in the oven, use one or more toothpicks to hold the folds in place.

  8. They’re ready when the outside is golden and crunchy.

  9. If you’re eating them straight away, be careful – the contents will be very hot!

Tofu Chorizo Recipe

Ingredients:

· 300g tofu

· 1 tsp smoked paprika

· 1/2 tsp chilli powder

· 1 tsp cumin

· 1 tsp garlic powder

· 1 tsp onion powder

· 1/2 tsp oregano

· A good pinch of salt & pepper

· 2 tsp maple syrup

· 2 tsp tomato paste

· 2 tsp soy sauce

· 2 tsp olive oil

· Pat the tofu dry, pressing out most of the liquid.

· Crumble into a bowl and add all the other ingredients to the tofu. Mix thoroughly with your hands until the tofu is fully coated. Line a baking tray or air fryer with baking paper and press the tofu lightly into a thin layer covering the tray.

· Bake at 200 degrees for 20-25 minutes. Take out after 10 minutes to mix around the tofu then every 5 minutes after that to ensure all the tofu gets cooked evenly.
