Lemon Curd

Ingredients:
250g golden kumara*
¾ cup sugar
1/3 cup freshly-squeezed lemon juice
Zest of one large lemon

How to make Lemon Curd

  1. Peel the kumara, taking care to remove any dark-coloured bits. Cut into even-sized chunks and steam until very tender. Set aside with the lid off so it cools and some of the moisture evaporates.

  1. Zest the lemon. If you haven’t got a zester, use a potato peeler (being careful not to get the white pith with the zest) and chop the strips of peel finely.

  2. Blend the cooked kumara with all the other ingredients in a food process, until very smooth.

Golden kumara gives the warm yellow colour we expect from lemon curd. Other types of kumara would make a delicious curd, but it will look quite different.
