Lemon Curd
Ingredients:
250g golden kumara*
¾ cup sugar
1/3 cup freshly-squeezed lemon juice
Zest of one large lemon
How to make Lemon Curd
Peel the kumara, taking care to remove any dark-coloured bits. Cut into even-sized chunks and steam until very tender. Set aside with the lid off so it cools and some of the moisture evaporates.
Zest the lemon. If you haven’t got a zester, use a potato peeler (being careful not to get the white pith with the zest) and chop the strips of peel finely.
Blend the cooked kumara with all the other ingredients in a food process, until very smooth.
Golden kumara gives the warm yellow colour we expect from lemon curd. Other types of kumara would make a delicious curd, but it will look quite different.
