Cinnamon Buns with Cream Cheese Icing
Ingredients:
Dough
2 cups flour
2 Tbsp white sugar
2 teaspoons baking powder
1 tps salt
3 Tbsp dairy-free margerine
3/4 cup soy milk
1 flax egg (1 Tbsp ground flax seed mixed with 3 Tbsp water)
Filling
1/4 cup brown sugar
1/4 cup white sugar
2 tsp cinnamon
Icing
1 cup icing sugar
1 tsp vanilla essence
3 Tbsp dairy-free margarine
Method:
Mix flour, white sugar, baking powder, and salt together in a large bowl. Work margarine into flour mixture using your hands.
Mix flaxseed egg together and leave in a bowl for 5 mins, then whisk the non-dairy milk into the flax egg. Pour into the flour mix and stir gently until a soft dough forms.
Place dough on a floured surface and roll into 1/2 cm thick rectangle. Take 2 tablespoons of melted margarine and brush over the surface of the dough.
Whisk the white sugar, brown sugar, and cinnamon together in a bowl and then sprinkle the cinnamon sugar over the margarine brushed dough.
Roll the dough around filling to form a log; then cut the log into approximately 16 piece segments.
Bake the rolls in oven at 200°C for 20 - 25 minutes.
With an electric beater, beat the cream cheese, margarine and vanilla essence together until there are no lumps. Then add icing sugar and mix until the frosting is smooth.
