Blueberry & Cream Cheese Banana Bread
Ingredients:
3 overripe bananas
3/4 cups dairy-free margarine
1 cup granulated sugar
1/4 cup soy milk
1 Tbsp cider vinegar
2 cups flour
1/4 cup corn starch
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1 tsp vanilla essence
1 1/2 cups frozen blueberries
Method:
Preheat the oven to 180°C. Whip the Angel Food cream cheese and margarine in a bowl with an electric whisk for several minutes until smooth and creamy. Then add sugar whilst still mixing, then add soy milk, mashed bananas, vanilla and cider vinegar at the same time and beat for another 2 minutes.
Combine flour, baking soda, baking powder and salt in a separate bowl. Then gradually mix into the wet ingredients mixing at a low speed. Add blueberries and slowly stir through the batter.
Split the batter between 2 greased bread tins. *Optional top with extra sliced bananas.
Place tins in oven at 180°C for about an hour, or until golden and a skewer comes out clean.
